Pez comienza a fines 1993 con Ariel Sanzo (Minimal) y los hermanos Poli y Ale Barbieri. Con esta formación graban “Cabeza” (1994). Dos años después, los Barbieri dejan Pez e ingresan Iris Auteri en bajo y Franco Salvador en batería y graban “Quemado” (1996). En 1996 Fósforo García ingresa como bajista y graban Pez (1998). Ese álbum es el primer paso a la independencia discográfica. En 2000 crean Azione Artigianale, su propio sello y editan Frágilinvencible. Con dos nuevos integrantes (Pablo Puntoriero en vientos y Juan Salese en teclados) en 2001 lanzan “Convivencia Sagrada” y en 2002 “El sol detrás del sol”. En 2003 rearman el quinteto con Leopoldo Limeres en piano eléctrico y Ernesto Romeo en sintetizadores y teclados y editan “Folklore” (2004) y “Para las almas sensibles” (en vivo, 2005). Ya sin Romeo lanzan “Hoy” (2006), “Los orfebres” (2007), “El porvenir” (2009), “Pez” (2010), “¡Viva Pez!” (en vivo, 2010) y Volviendo de las cavernas (2011). En 2012 vuelven a ser trío y graban “Nueva era, viejas mañas” (2013), "Psicodelicia" (en vivo, 2013) y “El manto eléctrico” (2014). Con Juan Ravioli en teclados, guitarra y voz editan “Rock Nacional” en 2016 y “Pelea al horror” en 2017. Ese año también graban junto a Litto Nebbia el disco "Rodar". En diciembre de 2018 editan "Banda de Covers", un homenaje al rock argentino. Son dos discos: uno en estudio y otro en vivo. En simultáneo graban un nuevo disco en estudio, "Kung Fu", que editan en 2019. Nuevamente como trío graban "Acariciar el fuego" en 2020 y lo editan en 2021. Con la incorporación de Hernán Espejo en guitarra graban y editan "ION" en 2023. A fines de 2024 vuelve Pepo Limeres a los teclados y lanzan "De Buenos Aires" en 2025.
